Instructions:
Turn on the Instant Pot to sauté mode and heat the vegetable oil.
Add the chopped onions and bell pepper, sauté until softened.
Stir in the diced tomatoes, curry powder, thyme, paprika, garlic powder, and ginger powder.
Add the rice and broth, season with salt and pepper.
Close the Instant Pot lid, set to high pressure for 5 minutes.
Once done, allow natural pressure release for 10 minutes, then quick release.
Fluff the rice with a fork and serve hot.

This recipe is a simplified version of the traditional West African Jollof Rice, adapted for the Instant Pot.
