Ingredients:  

Main Ingredients

  • 2 cups long-grain parboiled rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 2 cups chicken or vegetable broth
  • to taste salt and pepper
  • 1/4 cup vegetable oil

Instructions: 

  • Turn on the Instant Pot to sauté mode and heat the vegetable oil.
  • Add the chopped onions and bell pepper, sauté until softened.
  • Stir in the diced tomatoes, curry powder, thyme, paprika, garlic powder, and ginger powder.
  • Add the rice and broth, season with salt and pepper.
  • Close the Instant Pot lid, set to high pressure for 5 minutes.
  • Once done, allow natural pressure release for 10 minutes, then quick release.
  • Fluff the rice with a fork and serve hot.

Notes:

This recipe is a simplified version of the traditional West African Jollof Rice, adapted for the Instant Pot.
