Ingredients:  

Main Ingredients

  • 1 cup white rice
  • 1 can black beans, drained and rinsed
  • 1 3/4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper

Optional Toppings

  • as desired chopped cilantro
  • as desired diced avocado
  • as desired lime wedges

Instructions: 

  • Rinse the rice under cold water until the water runs clear.
  • In the Instant Pot, combine the rice, black beans, vegetable broth, cumin, chili powder, garlic powder, salt, and pepper.
  • Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes.
  • Allow for a natural pressure release for 10 minutes, then carefully do a quick release.
  • Fluff the rice and beans with a fork and serve with your favorite toppings.

You can customize this recipe with your favorite toppings like cheese, sour cream, or salsa.
