  • 1 pound dried red beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions: 

  • Rinse the red beans and pick out any debris.
  • In the Instant Pot, combine the red beans, onion, garlic, bell pepper, celery, thyme, oregano, paprika, bay leaf, and broth.
  • Close the lid and set the Instant Pot to high pressure for 45 minutes.
  • Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then do a quick release.
  • Season with salt and pepper to taste.
  • Serve the red beans over rice or enjoy on their own.
