Ingredients:  

Main Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Green onions for garnish

Instructions: 

  • Rinse the black-eyed peas and add them to the Instant Pot with 4 cups of water. Cook on high pressure for 10 minutes, then do a quick release.
  • Drain the peas and set aside. Wipe out the Instant Pot and return it to the sauté mode.
  • Add olive oil, onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.
  • Stir in thyme, smoked paprika, and cayenne pepper. Add rice and cook for 1-2 minutes.
  • Pour in vegetable broth and add the cooked black-eyed peas. Season with salt and pepper.
  • Close the Instant Pot lid, set to high pressure for 5 minutes, then do a quick release.
  • Fluff the rice with a fork and serve hot, garnished with green onions.

This dish is a great way to enjoy a traditional Southern meal with minimal effort, thanks to the Instant Pot.
