Ingredients:  

Main Ingredients

  • 2 cups egg whites
  • 0.5 cup diced bell peppers
  • 0.5 cup chopped spinach
  • 0.25 cup diced onions
  • 0.25 cup shredded cheese
  • to taste Salt
  • to taste Pepper

Instructions: 

  • In a bowl, whisk together the egg whites, bell peppers, spinach, onions, cheese, salt, and pepper.
  • Grease the egg bite mold and pour the egg mixture into each mold cavity.
  • Add 1 cup of water to the Instant Pot and place the trivet inside. Carefully place the egg bite mold on the trivet.
  • Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  • Once done, do a quick pressure release and carefully remove the egg bite mold from the Instant Pot.
  • Allow the egg bites to cool slightly before removing them from the mold. Serve warm and enjoy!

Notes:

These egg bites can be stored in the refrigerator for up to 5 days. Reheat in the microwave for a quick breakfast on the go.
