egg whites

diced bell peppers

Instructions:
In a bowl, whisk together the egg whites, bell peppers, spinach, onions, cheese, salt, and pepper.
Grease the egg bite mold and pour the egg mixture into each mold cavity.
Add 1 cup of water to the Instant Pot and place the trivet inside. Carefully place the egg bite mold on the trivet.
Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
Once done, do a quick pressure release and carefully remove the egg bite mold from the Instant Pot.
Allow the egg bites to cool slightly before removing them from the mold. Serve warm and enjoy!
Notes:
These egg bites can be stored in the refrigerator for up to 5 days. Reheat in the microwave for a quick breakfast on the go.
