Instructions:
Season beef with salt and pepper, then coat with flour.
Set Instant Pot to sauté mode, add olive oil, and brown beef in batches. Remove and set aside.
Sauté onions and garlic until fragrant, then add carrots and celery.
Pour in red wine to deglaze, scraping up any browned bits.
Add beef back to the pot, along with beef broth, diced tomatoes, tomato paste, and thyme.
Close the lid, set to high pressure for 25 minutes, then quick release.
Adjust seasoning if needed and serve hot.
Notes:
This stew pairs wonderfully with crusty bread or mashed potatoes.
