Ingredients:  

Main Ingredients

  • 2 pounds beef stew meat cut into chunks
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons flour

Instructions: 

  • Season beef with salt and pepper, then coat with flour.
  • Set Instant Pot to sauté mode, add olive oil, and brown beef in batches. Remove and set aside.
  • Sauté onions and garlic until fragrant, then add carrots and celery.
  • Pour in red wine to deglaze, scraping up any browned bits.
  • Add beef back to the pot, along with beef broth, diced tomatoes, tomato paste, and thyme.
  • Close the lid, set to high pressure for 25 minutes, then quick release.
  • Adjust seasoning if needed and serve hot.

Notes:

This stew pairs wonderfully with crusty bread or mashed potatoes.
