Ingredients:  

Main Ingredients

  • 1 cup basmati rice
  • 1 3/4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (optional)

Instructions: 

  • Rinse the rice under cold water until the water runs clear. Drain well.
  • Turn on the Instant Pot and select the sauté function. Heat the olive oil and sauté the onion and garlic until softened.
  • Add the rice, cumin, turmeric, salt, and pepper. Stir well to coat the rice with the spices.
  • Pour in the broth and give everything a good stir.
  • Close the Instant Pot with the lid, set the valve to sealing, and cook on high pressure for 4 minutes.
  • Once done, allow a natural pressure release for 5 minutes, then do a quick release.
  • Fluff the rice with a fork, and stir in the chopped parsley if using. Serve hot.

Notes:

Optional: Stir in chopped parsley for added freshness and color.
