Instructions:
Season beef shank with salt, pepper, paprika, and thyme.
Turn on the Instant Pot to sauté mode and heat olive oil.
Sear the beef shank on all sides until browned.
Add onions and garlic, sauté for 2 minutes.
Pour in beef broth and deglaze the pot.
Close the lid, set to high pressure for 1 hour.
Once done, allow natural pressure release for 15 minutes.
Serve beef shank with the cooking liquid as gravy.
Notes:
For extra flavor, you can add a splash of red wine while deglazing the pot.
