Ingredients:  

  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 leek, chopped
  • 1 clove garlic, smashed
  • 1 bay leaf
  • 1 teaspoon whole peppercorns
  • 8 cups water

Instructions: 

  • Place all ingredients in the Instant Pot.
  • Close the lid and set the valve to sealing.
  • Cook on high pressure for 30 minutes.
  • Allow for a natural pressure release.
  • Strain the broth and discard the solids.
  • Use immediately or store in the fridge for up to 5 days or freeze for later use.
