Ingredients:  

Main Ingredients

  • 3 lb top round roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste Salt
  • to taste Pepper

Instructions: 

  • Season the top round roast with salt and pepper.
  • Select the "Saute" function on the Instant Pot and heat the olive oil.
  • Sear the roast on all sides until browned, then remove and set aside.
  • Add the chopped onion and garlic to the Instant Pot, sauté until fragrant.
  • Pour in the beef broth and deglaze the pot, scraping up any browned bits.
  • Return the roast to the Instant Pot and sprinkle with thyme and rosemary.
  • Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes.
  • Allow for a natural pressure release for 15 minutes before quick releasing any remaining pressure.
  • Remove the roast from the Instant Pot and let it rest before slicing.
  • Serve the roast with the onion gravy from the pot.

Notes:

For a more flavorful roast, you can marinate the meat overnight with your favorite seasonings.
