  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup chicken broth
  • 0.5 cup sun-dried tomatoes
  • 0.5 cup Kalamata olives
  • 0.25 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions: 

  • Season the chicken breasts with oregano, basil, garlic powder, onion powder, salt, and pepper.
  • Set the Instant Pot to sauté mode and heat the olive oil. Brown the chicken breasts on both sides.
  • Add chicken broth, sun-dried tomatoes, and Kalamata olives to the Instant Pot.
  • Close the lid, set the Instant Pot to high pressure for 10 minutes.
  • Once done, do a quick pressure release and open the lid.
  • Serve the chicken topped with crumbled feta cheese and fresh parsley.

Notes:

This dish pairs well with a side of couscous or a fresh green salad.
