Ingredients:  

Main Ingredients

  • 2 lbs potatoes peeled and diced
  • 4 cups chopped cabbage
  • 1 cup milk
  • 4 tbsp butter
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions: 

  • Place the diced potatoes in the Instant Pot and add enough water to cover them. Close the lid and set the valve to sealing. Cook on high pressure for 8 minutes, then quick release the pressure.
  • Remove the potatoes from the Instant Pot and set aside. Add the chopped cabbage to the Instant Pot with a little water, then close the lid and cook on high pressure for 3 minutes. Quick release the pressure.
  • Drain the cabbage and return it to the Instant Pot. Add the cooked potatoes, milk, butter, salt, and pepper. Mash everything together until smooth and creamy.
  • Serve the Colcannon mashed potatoes hot, garnished with chopped green onions.

Notes:

For a richer flavor, you can use half-and-half or heavy cream instead of milk. You can also add cooked bacon bits for extra flavor.
