  • 1 lb beef brisket
  • 1 lb London broil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 cups beef broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup corn kernels
  • 1 cup green beans, chopped

Instructions: 

  • Cut the beef brisket and London broil into bite-sized pieces.
  • In the pressure cooker, sauté the onion and garlic until fragrant.
  • Add the beef brisket and London broil, and brown on all sides.
  • Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and pepper.
  • Pour in the beef broth and close the pressure cooker lid.
  • Cook on high pressure for 30 minutes.
  • Release the pressure naturally for 10 minutes, then quick release.
  • Add the carrots, celery, corn, and green beans.
  • Close the lid and cook on high pressure for an additional 15 minutes.
  • Release the pressure and serve hot.
