Ingredients:  

Main Ingredients

  • 1 cup dried red beans soaked overnight
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 1 teaspoon Cajun seasoning
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions: 

  • Rinse the red beans and soak them in water overnight.
  • In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.
  • Add the Cajun seasoning and drained red beans to the pot.
  • Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for about 1 hour or until beans are tender.
  • Season with salt and pepper to taste.
  • Serve over cooked rice.

Notes:
