Ingredients:  

Main Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the chicken thighs and brown them on all sides. Remove and set aside.
  • Add the onions and garlic to the pot and sauté until softened.
  • Pour in the diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
  • Add the chicken back to the pot.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick pressure release.
  • Serve the chicken stew hot with your favorite side dish.

Notes:

Feel free to add more vegetables like carrots or potatoes to make it even heartier.
