chicken thighs, boneless and skinless

onion, chopped

cloves
garlic, minced

can (14 oz)
diced tomatoes

cup
chicken broth

tsp
dried oregano
1
tsp
dried basil
Salt and pepper to taste

olive oil
Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the chicken thighs and brown them on all sides. Remove and set aside.
Add the onions and garlic to the pot and sauté until softened.
Pour in the diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir to combine.
Add the chicken back to the pot.
Close the Instant Pot lid and set to high pressure for 10 minutes.
Once done, do a quick pressure release.
Serve the chicken stew hot with your favorite side dish.
Notes:
Feel free to add more vegetables like carrots or potatoes to make it even heartier.
