  • 1 cup stone-ground grits
  • 4 cups water
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • to taste Salt and pepper
  • Chopped parsley for garnish

Instructions: 

  • In the Instant Pot, combine water and grits. Close the lid and set to high pressure for 10 minutes. Quick release the pressure and stir the grits.
  • Season shrimp with salt and pepper. Select sauté mode on the Instant Pot and heat olive oil. Add shrimp and cook until pink, then remove and set aside.
  • In the same pot, sauté onion, garlic, and bell pepper until softened. Add chicken broth and stir, scraping any browned bits from the bottom.
  • Stir in cooked grits and cheddar cheese until melted. Add shrimp back to the pot and stir to combine.
  • Serve the shrimp and grits hot, garnished with chopped parsley.
