Ingredients:  

Main Ingredients

  • 4 sheets nori seaweed
  • 2 cups cauliflower rice
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 4 oz smoked salmon
  • Soy sauce, for dipping
  • Pickled ginger and wasabi, for serving

Instructions: 

  • Place a sheet of nori on a bamboo sushi mat.
  • Spread a thin layer of cauliflower rice over the nori.
  • Arrange avocado, cucumber, and smoked salmon on top of the cauliflower rice.
  • Roll the sushi tightly using the bamboo mat.
  • Slice the roll into bite-sized pieces.
  • Serve with soy sauce, pickled ginger, and wasabi.

Notes:

Feel free to experiment with different fillings such as crab meat or shrimp for variety.
