Ingredients:  

Main Ingredients

  • 1 lb chicken breast sliced
  • 1 head cauliflower riced
  • 1 red bell pepper sliced
  • 1 small onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions: 

  • In a large skillet, heat olive oil over medium-high heat.
  • Add sliced chicken breast and cook until browned and cooked through.
  • Push the chicken to one side of the skillet and add garlic, bell pepper, and onion. Cook until vegetables are tender.
  • Add cauliflower rice, soy sauce, and sesame oil to the skillet. Stir well to combine.
  • Cook for an additional 5-7 minutes, stirring frequently.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.

Notes:

This dish is a great low-carb alternative to traditional stir fry. You can also add other vegetables like broccoli or snap peas for more variety.
