Instructions:
Preheat the oven to 375°F (190°C).
In a skillet, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
Add the chili powder, cumin, paprika, salt, and pepper to the beef mixture. Stir well to combine.
Pour half of the enchilada sauce into the bottom of a baking dish.
Fill each tortilla with the beef mixture, roll it up, and place it seam side down in the baking dish.
Pour the remaining enchilada sauce over the top of the rolled tortillas.
Sprinkle the shredded cheddar cheese over the enchiladas.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Serve hot with optional toppings like sour cream, avocado, and cilantro.
Notes:
Feel free to customize the toppings to your liking. You can also use different types of cheese or add some jalapeños for extra spice.
