Ingredients:  

Main Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup enchilada sauce
  • 8 pieces low-carb tortillas
  • 1 cup shredded cheddar cheese

Optional Toppings

  • sour cream
  • avocado
  • cilantro

Instructions: 

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the ground beef, onion, and garlic until the beef is browned. Drain any excess fat.
  • Add the chili powder, cumin, paprika, salt, and pepper to the beef mixture. Stir well to combine.
  • Pour half of the enchilada sauce into the bottom of a baking dish.
  • Fill each tortilla with the beef mixture, roll it up, and place it seam side down in the baking dish.
  • Pour the remaining enchilada sauce over the top of the rolled tortillas.
  • Sprinkle the shredded cheddar cheese over the enchiladas.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  • Serve hot with optional toppings like sour cream, avocado, and cilantro.

Notes:

Feel free to customize the toppings to your liking. You can also use different types of cheese or add some jalapeños for extra spice.
