Instructions:
Set your Instant Pot to sauté mode and sauté the onion and garlic until fragrant.
Add the bell pepper, chickpeas, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper to the Instant Pot.
Close the lid and set the Instant Pot to high pressure for 10 minutes.
Once done, allow for a natural pressure release for 5 minutes before manually releasing the remaining pressure.
Serve the chickpea stew hot, garnished with fresh parsley.
