Ingredients:  

Main Ingredients

  • 2 cans chickpeas drained and rinsed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Set your Instant Pot to sauté mode and sauté the onion and garlic until fragrant.
  • Add the bell pepper, chickpeas, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper to the Instant Pot.
  • Close the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 5 minutes before manually releasing the remaining pressure.
  • Serve the chickpea stew hot, garnished with fresh parsley.
