Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Dumplings

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp chopped fresh parsley

Instructions: 

  • Place chicken thighs, chicken broth, water, carrots, celery, onion, garlic, thyme, salt, and pepper in the Instant Pot.
  • Close the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once the cooking time is up, do a quick pressure release.
  • In a bowl, mix together flour, baking powder, salt, and milk to form a dough.
  • Drop spoonfuls of the dough into the Instant Pot.
  • Close the lid and set the Instant Pot to high pressure for an additional 10 minutes.
  • Once the cooking time is up, do a quick pressure release.
  • Stir in chopped parsley before serving.
