Ingredients:  

Main Ingredients

  • 1 lb flank steak thinly sliced
  • 1 cup Arborio rice
  • 1 onion diced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 4 cups beef broth
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the sliced flank steak and cook until browned. Remove and set aside.
  • Add the diced onion and sliced bell peppers to the Instant Pot. Cook until softened.
  • Stir in the Arborio rice and cook for 1-2 minutes.
  • Pour in the beef broth and season with salt and pepper.
  • Close the Instant Pot lid and set to high pressure for 6 minutes.
  • Once done, quick release the pressure and stir in the cooked steak and Parmesan cheese.
  • Serve hot and enjoy!
