Ingredients:  

Main Ingredients

  • 1 head cauliflower
  • 2 tablespoons oil
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 carrot diced
  • 1/2 cup peas
  • 2 eggs beaten
  • 3 tablespoons soy sauce
  • to taste salt and pepper
  • green onions for garnish

Instructions: 

  • Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  • Heat oil in a pressure cooker and sauté garlic and onion until fragrant.
  • Add carrot and peas, cook for a few minutes.
  • Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked.
  • Stir in the cauliflower rice and soy sauce. Cook for about 5 minutes until the cauliflower is tender.
  • Season with salt and pepper, garnish with green onions, and serve hot.

Notes:

Feel free to add other vegetables or proteins to customize this dish to your liking.
