Instructions:
Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
Heat oil in a pressure cooker and sauté garlic and onion until fragrant.
Add carrot and peas, cook for a few minutes.
Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked.
Stir in the cauliflower rice and soy sauce. Cook for about 5 minutes until the cauliflower is tender.
Season with salt and pepper, garnish with green onions, and serve hot.
