celery, chopped

zucchini, diced

bell pepper, diced

cloves
garlic, minced

can (14 oz)
diced tomatoes

vegetable broth

teaspoon
dried oregano

teaspoon
dried basil
Salt and pepper to taste
Instructions:
Set the Instant Pot to sauté mode and sauté the onion, carrots, and celery for 5 minutes.
Add the zucchini, bell pepper, and garlic, and sauté for another 2 minutes.
Stir in the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
Close the Instant Pot lid and set to manual high pressure for 5 minutes.
Once done, quick release the pressure and serve hot.
Notes:
This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days. It’s also freezer-friendly.
