Ingredients:  

Main Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and sauté the onion, carrots, and celery for 5 minutes.
  • Add the zucchini, bell pepper, and garlic, and sauté for another 2 minutes.
  • Stir in the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  • Close the Instant Pot lid and set to manual high pressure for 5 minutes.
  • Once done, quick release the pressure and serve hot.

Notes:

This soup is perfect for meal prep and can be stored in the refrigerator for up to 5 days. It’s also freezer-friendly.
