In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
Stir in heavy cream and Parmesan cheese until the sauce is smooth and creamy.
Return chicken to the skillet and simmer for about 10 minutes until chicken is cooked through and the sauce has thickened.
Garnish with chopped parsley before serving.
