Ingredients:  

Main Ingredients

  • 2 pounds red potatoes cubed
  • 1 cup water
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs chopped
  • Salt and pepper to taste
  • Paprika for garnish

Instructions: 

  • Place the cubed potatoes and water in the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 4 minutes.
  • Quick release the pressure and drain the potatoes.
  • In a large bowl, mix together the mayonnaise, mustard, celery, red onion, and eggs.
  • Add the cooked potatoes to the bowl and gently mix until well combined.
  • Season with salt and pepper to taste.
  • Sprinkle with paprika before serving.
