Ingredients:  

Main Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and sauté the onion, carrots, and celery for 5 minutes.
  • Add the zucchini, bell pepper, and garlic, and sauté for another 2 minutes.
  • Stir in the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  • Close the Instant Pot lid, set to high pressure for 5 minutes.
  • Once done, quick release the pressure and serve hot.

Notes:

This soup is perfect for a light lunch or dinner. You can add more vegetables or adjust the seasoning to your taste. It's also great for meal prep and can be stored in the refrigerator for up to 5 days.
