Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 0.25 cup soy sauce
  • 0.25 cup honey
  • 2 units limes, juiced
  • 4 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 0.5 tsp red pepper flakes
  • unit Cooked rice, for serving
  • unit Sliced green onions, for garnish
  • unit Sesame seeds, for garnish

Instructions: 

  • In a bowl, mix together soy sauce, honey, lime juice, garlic, ginger, sesame oil, and red pepper flakes.
  • Add chicken thighs to the Instant Pot and pour the sauce over them.
  • Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  • Once done, do a quick release and shred the chicken using two forks.
  • Serve the Korean lime chicken over rice, garnished with green onions and sesame seeds.

Notes:

Feel free to adjust the amount of red pepper flakes to suit your spice preference.
