Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 lb chicken breasts, diced
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, carrots, celery, and garlic. Sauté for 5 minutes.
  • Stir in the thyme, rosemary, wild rice, chicken broth, and chicken.
  • Close the lid, set the Instant Pot to high pressure for 20 minutes.
  • Once done, allow natural pressure release for 10 minutes, then quick release.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes:

This soup is perfect for a cozy meal and can be stored in the fridge for up to 3 days.
