Ingredients:  

Main Ingredients

  • 1 box white cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup amaretto liqueur
  • 1 cup chopped maraschino cherries
  • 1/2 cup sliced almonds
  • Powdered sugar for dusting

Instructions: 

  • In a mixing bowl, combine the cake mix, eggs, vegetable oil, water, and amaretto. Mix until well combined.
  • Fold in the chopped cherries and sliced almonds.
  • Pour the batter into a greased cake pan that fits in your Instant Pot.
  • Add 1 cup of water to the Instant Pot and place the trivet inside.
  • Carefully lower the cake pan onto the trivet.
  • Close the lid, set the valve to sealing, and cook on high pressure for 35 minutes.
  • Allow for a natural pressure release for 10 minutes, then do a quick release.
  • Carefully remove the cake from the Instant Pot and let it cool.
  • Dust with powdered sugar before serving.

Notes:

This cake is perfect for festive occasions and can be served with a scoop of vanilla ice cream for an extra treat.
