Ingredients:  

Main Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 pound chicken, diced
  • 1 pound andouille sausage, sliced
  • 1 can (14 oz) diced tomatoes
  • 1.5 cups chicken broth
  • 1 cup long grain rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions: 

  • Set the Instant Pot to sauté mode and heat the oil.
  • Add the onion, bell pepper, celery, and garlic. Cook until softened.
  • Add the chicken and sausage, cook until browned.
  • Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, oregano, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 8 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Fluff the jambalaya with a fork and serve garnished with chopped green onions.

Notes:

For an extra kick, add a dash of hot sauce before serving.
