Green onions, chopped (for garnish)
Instructions:
Set the Instant Pot to sauté mode and heat the oil.
Add the onion, bell pepper, celery, and garlic. Cook until softened.
Add the chicken and sausage, cook until browned.
Stir in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, oregano, salt, and pepper.
Close the Instant Pot lid and set to high pressure for 8 minutes.
Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
Fluff the jambalaya with a fork and serve garnished with chopped green onions.
Notes:
For an extra kick, add a dash of hot sauce before serving.
