Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup white rice
  • 1 cup chicken broth
  • 0.25 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions: 

  • Place chicken thighs in the Instant Pot.
  • In a bowl, mix together chicken broth, hoisin sauce, soy sauce, garlic, and ginger. Pour over the chicken.
  • Add rice on top of the chicken.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Shred the chicken and mix everything together.
  • Serve garnished with green onions and sesame seeds.

Notes:

For extra flavor, you can marinate the chicken in the sauce mixture for 30 minutes before cooking.
