Instructions:
Season the pork tenderloin with salt, pepper, and garlic powder.
Select the "Saute" function on the Instant Pot and heat the olive oil. Sear the pork tenderloin on all sides until browned.
Add the bourbon, apple cider, brown sugar, and sliced apples to the Instant Pot.
Close the lid, set the valve to sealing, and cook on high pressure for 15 minutes.
Once done, do a quick pressure release and remove the pork tenderloin from the Instant Pot.
In a small bowl, mix cornstarch and water to create a slurry. Add the slurry to the liquid in the Instant Pot to thicken the sauce.
Slice the pork tenderloin and serve with the apple bourbon sauce.
