Instructions:
Season the diced pork shoulder with salt, pepper, garlic powder, and onion powder.
Set the Instant Pot to sauté mode and brown the pork shoulder in batches. Remove and set aside.
In the same pot, sauté the garlic, onion, and red bell pepper until softened.
Add the browned pork back to the pot and stir in the soy sauce, brown sugar, ground ginger, and pineapple chunks.
Close the Instant Pot lid, set to high pressure for 15 minutes, then do a quick release.
Serve the Aloha pork in warm tortillas with your favorite toppings.
Notes:
For a spicier kick, add some chopped jalapenos to the mix. You can also serve with a side of rice or a fresh salad for a complete meal.
