Ingredients:  

Main Ingredients

  • 1 lb pork shoulder diced
  • 1 can pineapple chunks drained
  • 1 red bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 8 small flour tortillas
  • Salt and pepper to taste
  • Optional toppings cilantro, lime wedges, jalapenos

Instructions: 

  • Season the diced pork shoulder with salt, pepper, garlic powder, and onion powder.
  • Set the Instant Pot to sauté mode and brown the pork shoulder in batches. Remove and set aside.
  • In the same pot, sauté the garlic, onion, and red bell pepper until softened.
  • Add the browned pork back to the pot and stir in the soy sauce, brown sugar, ground ginger, and pineapple chunks.
  • Close the Instant Pot lid, set to high pressure for 15 minutes, then do a quick release.
  • Serve the Aloha pork in warm tortillas with your favorite toppings.

Notes:

For a spicier kick, add some chopped jalapenos to the mix. You can also serve with a side of rice or a fresh salad for a complete meal.
