  • 1 cup Israeli couscous
  • 1.5 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes, drained
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Turn on the Instant Pot to sauté mode and heat olive oil.
  • Add onion and garlic, sauté until fragrant.
  • Add zucchini, bell pepper, diced tomatoes, oregano, salt, and pepper. Stir well.
  • Add Israeli couscous and vegetable broth. Stir to combine.
  • Close the Instant Pot lid and set to high pressure for 5 minutes.
  • Once done, quick release the pressure and open the lid.
  • Fluff the couscous with a fork and serve garnished with fresh parsley.

Notes:
