This Coq au Vin recipe is a simplified version of the classic French dish, made easy with the Ninja Foodi. Perfect for a comforting and flavorful meal.
Select the "Sear/Sauté" function on the Ninja Foodi and cook the bacon until crispy.
Add the chicken thighs and brown on both sides. Remove and set aside.
Sauté the onion and garlic until softened.
Stir in the tomato paste and flour until combined.
Pour in the red wine and chicken broth, stirring to deglaze the pot.
Return the chicken thighs to the pot.
Close the lid, select the "Pressure Cook" function, and cook for 20 minutes.
Once done, let the pressure release naturally for 10 minutes before quick releasing.
Garnish with fresh thyme and parsley before serving.
