Instructions:
Set the Instant Pot to sauté mode and cook the onion and garlic until softened.
Add the corn, broth, potatoes, carrots, thyme, paprika, salt, and pepper to the Instant Pot.
Close the lid, set the Instant Pot to manual high pressure for 5 minutes.
Quick release the pressure, then stir in the heavy cream.
Serve hot, garnished with chopped parsley.
Notes:
For a thicker chowder, you can blend a portion of the soup before adding the heavy cream.
