Ingredients:  

Main Ingredients

  • 4 cups frozen corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Chopped fresh parsley for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and cook the onion and garlic until softened.
  • Add the corn, broth, potatoes, carrots, thyme, paprika, salt, and pepper to the Instant Pot.
  • Close the lid, set the Instant Pot to manual high pressure for 5 minutes.
  • Quick release the pressure, then stir in the heavy cream.
  • Serve hot, garnished with chopped parsley.

Notes:

For a thicker chowder, you can blend a portion of the soup before adding the heavy cream.
