Instructions:
Place chicken, rice, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper in the Instant Pot.
Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
Stir the mixture well and serve in bowls.
Top with shredded cheese, avocado, sour cream, and cilantro if desired.
Notes:
Feel free to customize the toppings to your liking. This dish can also be served with a side of tortilla chips for added crunch.
