Ingredients:  

Main Ingredients

  • 1 lb chicken breast diced
  • 1 cup rice
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Optional Toppings

  • shredded cheese
  • avocado
  • sour cream
  • cilantro

Instructions: 

  • Place chicken, rice, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper in the Instant Pot.
  • Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  • Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
  • Stir the mixture well and serve in bowls.
  • Top with shredded cheese, avocado, sour cream, and cilantro if desired.

Notes:

Feel free to customize the toppings to your liking. This dish can also be served with a side of tortilla chips for added crunch.
