Instructions:
Preheat the air fryer to 400°F (200°C).
Cut a slit in each pork chop to create a pocket.
Season the inside of each pocket with garlic powder, paprika, salt, and pepper.
Stuff each pork chop with a slice of pepper jack cheese.
In a shallow dish, mix breadcrumbs with a bit of salt and pepper.
Dip each stuffed pork chop in the breadcrumb mixture, coating evenly.
Place the pork chops in the air fryer basket in a single layer.
Lightly spray the pork chops with cooking spray.
Air fry for 18-20 minutes, flipping halfway through, until the pork is cooked through and the breadcrumbs are crispy.
