Instructions:
Set the Instant Pot to sauté mode and heat the olive oil. Add the onion and garlic, and sauté until softened.
Stir in the Italian seasoning and red pepper flakes.
Pour in the broth and diced tomatoes, then add the frozen ravioli. Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
Once done, quick release the pressure and stir in the spinach until wilted. Season with salt and pepper.
Ladle the soup into bowls, top with shredded mozzarella, and garnish with fresh basil.
Notes:
This soup is perfect for a quick and comforting meal. You can also add other vegetables like carrots or zucchini for extra nutrition.
