Ingredients:  

Main Ingredients

  • 2 ripe bananas
  • 0.5 cup canned pumpkin puree
  • 1 cup rolled oats
  • 0.25 cup honey
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.25 teaspoon salt
  • 0.25 cup chopped walnuts optional

Instructions: 

  • Mash the bananas in a mixing bowl.
  • Add the pumpkin puree, rolled oats, honey, cinnamon, nutmeg, salt, and walnuts. Mix well.
  • Grease the muffin tin and spoon the mixture into each cup.
  • Add 1 cup of water to the Instant Pot, place the trivet inside, and put the muffin tin on top.
  • Close the lid, set to high pressure for 15 minutes, and do a quick release.
  • Let the bites cool before removing from the tin.

Notes:

These bites can be stored in an airtight container in the refrigerator for up to 5 days. They make a great on-the-go snack or a quick breakfast option.
