Ingredients:  

Main Ingredients

  • 1 cup quinoa
  • 1 3/4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Rinse the quinoa under cold water and drain well.
  • Turn on the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion and garlic, sauté until fragrant.
  • Add the carrot and bell pepper, cook for a few minutes.
  • Stir in the quinoa, cumin, salt, and pepper.
  • Pour in the vegetable broth and give everything a good stir.
  • Close the Instant Pot lid, set to high pressure for 1 minute.
  • Once done, allow for a natural pressure release for 10 minutes.
  • Fluff the quinoa pilaf with a fork and serve garnished with fresh parsley.

Notes:

This dish is versatile and can be served as a side or a main dish. Feel free to add other vegetables or proteins to make it your own.
