Instructions:
Rinse the quinoa under cold water and drain well.
Turn on the Instant Pot to sauté mode and heat the olive oil.
Add the onion and garlic, sauté until fragrant.
Add the carrot and bell pepper, cook for a few minutes.
Stir in the quinoa, cumin, salt, and pepper.
Pour in the vegetable broth and give everything a good stir.
Close the Instant Pot lid, set to high pressure for 1 minute.
Once done, allow for a natural pressure release for 10 minutes.
Fluff the quinoa pilaf with a fork and serve garnished with fresh parsley.
Notes:
