Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • Cooked bacon, crumbled (optional) optional
  • Chopped green onions (optional) optional

Instructions: 

  • Place chicken breasts in the Instant Pot.
  • Sprinkle ranch seasoning mix over the chicken.
  • Place cream cheese on top of the chicken.
  • Pour chicken broth over everything.
  • Close the Instant Pot lid and set to high pressure for 15 minutes.
  • Once done, do a quick release and open the lid.
  • Shred the chicken using two forks.
  • Stir in cheddar cheese until melted.
  • Serve topped with crumbled bacon and green onions if desired.

Notes:

For a lower-carb option, serve the crack chicken over cauliflower rice or a bed of greens.
