English muffins, split and toasted
Instructions:
In a bowl, whisk together the eggs, tomatoes, spinach, feta cheese, oregano, salt, and pepper.
Pour 1 cup of water into the Instant Pot and place a trivet inside.
Pour the egg mixture into a greased heatproof dish that fits inside the Instant Pot.
Place the dish on the trivet.
Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 5 minutes.
Once done, do a quick pressure release and carefully remove the dish from the Instant Pot.
Use a knife to cut the egg mixture into two portions.
Assemble the sandwiches by placing the egg mixture on the toasted English muffins.
