Ingredients:  

Main Ingredients

  • 4 eggs
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 2 tablespoons crumbled feta cheese
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 English muffins, split and toasted

Instructions: 

  • In a bowl, whisk together the eggs, tomatoes, spinach, feta cheese, oregano, salt, and pepper.
  • Pour 1 cup of water into the Instant Pot and place a trivet inside.
  • Pour the egg mixture into a greased heatproof dish that fits inside the Instant Pot.
  • Place the dish on the trivet.
  • Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 5 minutes.
  • Once done, do a quick pressure release and carefully remove the dish from the Instant Pot.
  • Use a knife to cut the egg mixture into two portions.
  • Assemble the sandwiches by placing the egg mixture on the toasted English muffins.

This recipe is perfect for a quick and nutritious breakfast. You can also customize it by adding other vegetables or using different types of cheese.
