Ingredients:  

Main Ingredients

  • 8 eggs
  • 4 fire-roasted sausages, sliced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • to taste Salt and pepper
  • Cooking spray

Instructions: 

  • Preheat the oven to 350°F (175°C) and spray a mini muffin tin with cooking spray.
  • In a bowl, whisk the eggs and season with salt and pepper.
  • Stir in the sliced sausages, cheddar cheese, and green onions.
  • Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 15 minutes or until the eggs are set.
  • Remove from the oven and let cool slightly before serving.
