Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked rice

Optional Toppings

  • shredded cheese optional
  • sour cream optional
  • avocado optional
  • cilantro optional

Instructions: 

  • In a large skillet, cook the ground beef over medium heat until browned.
  • Add the onion, bell pepper, and garlic. Cook until vegetables are tender.
  • Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Cook for another 5 minutes.
  • Add the cooked rice to the skillet and mix well.
  • Serve the taco hash hot, topped with shredded cheese, sour cream, avocado, and cilantro if desired.
