Ingredients:  

Main Ingredients

  • 8 oz cheese tortellini
  • 1 lb chicken breast, diced
  • 6 cups chicken broth
  • 2 cups chopped kale
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions: 

  • In a large pot, sauté the onion and garlic until fragrant.
  • Add the diced chicken and cook until no longer pink.
  • Pour in the chicken broth and bring to a simmer.
  • Add the diced tomatoes, thyme, salt, and pepper. Let it simmer for 10 minutes.
  • Add the cheese tortellini and kale, cook until tortellini is tender.
  • Serve hot and enjoy!
