Instructions:
In a large pot, sauté the onion and garlic until fragrant.
Add the diced chicken and cook until no longer pink.
Pour in the chicken broth and bring to a simmer.
Add the diced tomatoes, thyme, salt, and pepper. Let it simmer for 10 minutes.
Add the cheese tortellini and kale, cook until tortellini is tender.
