Ingredients:  

Main Ingredients

  • 4 cups Beets, peeled and diced
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a pot over medium heat.
  • 2. Add the chopped onion and garlic, and sauté until soft.
  • 3. Add the diced beets and vegetable broth.
  • 4. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • 5. Blend the soup until smooth.
  • 6. Season with salt and pepper to taste.

Notes:

Serve hot with a dollop of sour cream if desired.
