Ingredients:  

Main Ingredients

  • 2 medium Beets peeled and grated
  • 1 medium Carrot peeled and grated
  • 1 tbsp Olive Oil
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions: 

  • 1. Peel and grate the beets and carrot.
  • 2. In a mixing bowl, combine the grated beets and carrot.
  • 3. Add olive oil, lemon juice, salt, and black pepper. Mix well.
  • 4. Serve immediately or refrigerate for later.

Notes:

This salad is best served fresh but can be refrigerated for up to 2 days.
