South African Melktert Recipe

A traditional South African dessert with a creamy milk filling and a hint of cinnamon.

Equipment

Ingredients:  

Crust

  • 1 cup flour
  • 1 tsp baking powder
  • 0.5 cup sugar
  • 0.5 cup butter melted

Filling

  • 4 cups milk
  • 2 tbsp cornstarch
  • 2 tbsp flour
  • 0.5 cup sugar
  • 3 eggs separated
  • 1 tsp vanilla extract
  • 1 tsp cinnamon for dusting

Instructions: 

  • Preheat the oven to 350°F (175°C).
  • Mix flour, baking powder, sugar, and melted butter to form the crust. Press into a pie dish.
  • In a saucepan, heat the milk until warm. Mix cornstarch, flour, and sugar in a bowl. Add to the milk and cook until thickened.
  • Beat egg yolks and add to the milk mixture. Cook for another 2 minutes, then remove from heat and add vanilla extract.
  • Beat egg whites until stiff peaks form. Fold into the milk mixture.
  • Pour the filling into the crust. Bake for 25-30 minutes or until set. Let cool and dust with cinnamon.

Notes:

Best served chilled.
